Vegetable Couscous with Beef Patties
Vegetable couscous with beef patties: a classic dish with an oriental twist at Spoonsparrow!
Ingredients
- 1 onion
- 250 g ground beef
- 1 egg
- 20 g rolled oats (2 tbsp)
- Salt
- Pepper
- 0.5 tsp ground cumin
- 0.25 tsp paprika powder
- 2 tsp Olive oil
- 1 Zucchini
- 2 carrots
- 125 g tomatoes
- 100 g couscous (or bulgur)
- 300 ml Vegetable broth
- a pinch chili flakes
Instructions

Peel and chop the onion. Mix the ground beef with half of the chopped onion, egg, and rolled oats; season with salt, pepper, cumin, and paprika; shape into 4 patties.

Heat 1 tsp oil in a pan and brown the patties on both sides for 7 minutes each over medium heat.

Meanwhile, peel, wash, and dice the zucchini, carrots, and tomatoes.

Heat the remaining oil in a pot, sauté onion, zucchini, carrot, and tomato for 5 minutes over medium heat. In a separate bowl pour hot broth over couscous and let it sit for 5 minutes to absorb. Fluff the couscous with a fork, combine with the vegetables, season with chili flakes, salt, and pepper.

Serve the beef patties atop the vegetable couscous.
