Chicken Skewers with Pineapple

Ingredients

  • 2 chicken breast fillets
  • 400 g turkey breast fillet
  • 2 mandarins
  • 2 Bananas
  • 200 g pineapple chunks (fresh or canned)
  • 2 Apricots
  • 1 tbsp honey
  • 1 tsp Cayenne pepper
  • 1 tbsp fresh grated ginger
  • 3 tbsp Soy sauce
  • 2 tbsp oil

Instructions

    Wash and pat dry the chicken and turkey breasts, then cut into small pieces.

    Peel and segment the mandarins.

    Peel and slice the bananas.

    Wash, halve, pit, and cut the apricots into wedges.

    Thread meat and fruit alternately onto skewers.

    Whisk honey with cayenne pepper, ginger, soy sauce, and oil to make a glaze. Rub the skewers with it and let marinate for about 30 minutes.

    Grill the skewered chicken and pineapple over medium heat, turning frequently, for about 8 minutes until golden brown, basting occasionally with the remaining glaze.
