Asian Shrimp Skewers

Ingredients

  • 16 peeled shrimp (with tail end)
  • 2 Garlic cloves
  • juice of 1 lemon
  • 5 tbsp olive oil
  • 150 ml fish stock (glass)
  • 1 small red chili pepper
  • 1 Spring onion
  • 0.5 bunch coriander leaves (or parsley)
  • Salt
  • ground pepper

Instructions

    Peel and finely chop the garlic. Slice the chili pepper lengthwise, remove seeds, wash, and finely mince. Wash and trim the spring onion, then slice into thin rings. Wash the coriander (or parsley), shake dry, and roughly chop the leaves. Prepare a marinate with oil, fish stock, garlic, chili, spring onion, coriander, salt, and pepper; season with some lemon juice.

    Wash the shrimp, pat them dry, place in the marinate and let sit for about 30 minutes. Skewer four shrimp each and grill over high heat, turning and basting with the marinate every few turns for 4–5 minutes. Finish the Asian shrimp skewers by drizzling remaining lemon juice and serving with leftover sauce.
