Chicken Salad with Celery Stalks and Walnuts

Ingredients
- 0.25 cold chicken
- 3 celery stalks
- 1 tbsp walnut kernels
- 0.25 bunch flat-leaf parsley
- 2 tsp mayonnaise
- 1 tsp sharp mustard
- 1 tbsp White Wine Vinegar
- Salt
- ground pepper
- a pinch sugar
- 1 tbsp Sunflower oil

Separate the roasted chicken meat from the bones and cut into small pieces. Wash and trim the celery stalks, reserving a bit of fresh green for garnish. Slice the stalks thinly. Mix the chicken and celery in a bowl.

For the dressing whisk mayonnaise with mustard and vinegar until smooth. Season with salt, pepper, and sugar, then slowly drizzle in sunflower oil. Taste again and pour the dressing over the salad, mix, and let sit briefly. Roughly chop the walnut kernels with a large knife.

Wash and dry the parsley, remove the leaves and finely chop them. Finely cut the celery greens as well. Fold half of the walnuts and parsley into the salad, sprinkle the rest on top for decoration, and serve.
