Ingredients
- 1 Red Onion
- 2 sprigs thyme
- 1 tbsp Olive Oil
- 1 tbsp White Wine Vinegar
- 1 tbsp honey
- Salt
- Pepper
- 300 g mango (1 small mango)
- 10 g arugula (1 handful)
- 4 slices Whole grain toast
- 100 g cream cheese (45% fat in liquid form)
- 200 g smoked chicken breast cutlets (sliced)
- 0.5 tsp smoked paprika powder

Peel the onion and dice finely. Wash thyme, pat dry, and pluck leaves. Combine both with oil, vinegar, and honey in a bowl; season with salt and pepper.

Peel the mango and slice the flesh from the pit into thin slices. Wash arugula, spin dry, and trim stems if desired.

Toast bread slices for 4–5 minutes. Spread cream cheese on toast. Top with arugula, then place chicken slices. Arrange mango slices over the chicken. Drizzle onion-honey salsa over the toast and sprinkle smoked paprika.
