Homemade Vegetable Chips

Ingredients
- 1 medium beetroot (120 g)
- 200 g waxy potatoes
- 200 g sweet potatoes
- Salt
- 3 tbsp olive oil

Peel the beetroot, potatoes, and sweet potatoes. Slice the vegetables as thinly as possible; slice the beetroot separately in a bowl to prevent color transfer to the potatoes. Sprinkle all vegetables generously with salt, mix, and let soak in water for about 20 minutes.

Preheat the oven to 180°C fan‑fry. Line two baking trays with parchment paper.

Rinse the sliced vegetables in a colander and spread them on kitchen paper. Pat dry with a second layer of kitchen paper. Toss with olive oil and arrange on the baking trays. Bake for 15–20 minutes, depending on thickness and size of slices, until crisp. For crunchier chips bake slightly longer. Remove from oven and serve sprinkled with coarse salt.
