Shrimp Tortillas with Chickpea Flour

Ingredients

  • 200 g Flour
  • 100 g chickpea flour
  • 1 egg
  • 1 Shallot
  • 2 tbsp fresh chopped parsley
  • Salt
  • pepper (ground)
  • olive oil (for frying)
  • 300 g North Sea shrimp (peeled)

Instructions

    Whisk both flours with the egg and about 400 ml water until smooth. Let rest for about 20 minutes. Peel and finely chop the shallot. Stir in parsley and season with salt and pepper.

    Heat a little oil in a hot pan and cook the tortillas portion by portion. Pour 1–2 tbsp of batter into the oil, sprinkle with some shrimp, brown for 1–2 minutes, flip and cook for about 1 minute until done. Remove from pan and repeat for all tortillas.
