Ingredients
- 100 ml heavy cream
- 50 g butter
- 100 g Harzer cheese (Roller)
- 125 g quark
- 0.5 tsp Baking soda
- 1 small red onion
- 0.5 handful chives
- 8 slices country bread
- 20 g butter

Warm the butter with the cream slowly in a tall pot. Dice the Harzer cheese, add it and let it melt, stirring occasionally. Bring to a boil once, then remove from heat and stir in the quark. Finally fold in the baking soda; this will cause the mixture to rise. Immediately transfer to a bowl and refrigerate overnight.

Before serving peel and finely chop the onion. Rinse the chives and cut into ribbons. Thinly spread butter and the cheese sauce on the bread slices. Sprinkle with onions and chives before serving.
