Ingredients

  • 0.5 TL butter
  • 200 g chickpea flour
  • 2 EL parsley
  • 1 TL salt
  • 125 ml peanut oil
  • pepper (ground)
  • Sea salt
  • 250 g mini mozzarella balls
  • 200 g cocktail tomatoes
  • 1 EL chopped basil
  • 1 EL balsamic vinegar
  • Salt
  • coarse pepper
  • 2 EL extra virgin olive oil

Instructions

    Melt the butter in a pot. Remove from heat, add chickpea flour with parsley, salt and 500 ml water and stir until smooth. Return to heat. Cook the batter over low heat while stirring until it thickens like stiff gruel.

    Spread the batter onto greased parchment paper into a finger-thick slab measuring 15 by 20 cm. Let dry for 15 minutes. Cut into finger-width, finger-length pieces. Arrange the pieces side‑by‑side on a wooden board and let dry for another 40 minutes.

    Heat half of the oil in a pan. Fry half of the "fries" for about 5 minutes until golden brown. Drain on paper towels and sprinkle with pepper and coarse sea salt while still hot. Repeat with the remaining oil and fries.
