Chicken Fillet Saltimbocca Style

Ingredients

  • 4 chicken breast fillets (about 160 g each)
  • 3 tbsp olive oil
  • 200 g mozzarella
  • 8 sage leaves
  • 8 slices Parma ham
  • Salt
  • Pepper (freshly ground)
  • 100 ml dry white wine
  • 60 g garden cress (for garnish)

Instructions

    Preheat the oven to 200°C with fan and top heat.

    Wash the chicken breasts, pat dry, cut each in half crosswise. Lightly flatten with a hammer. Sear in 2 tbsp hot oil on both sides for a few seconds. Transfer to an oiled baking tray. Slice the mozzarella into rounds. Top each chicken breast slice with one Parma ham slice, one sage leaf and about two mozzarella slices. Season with pepper and lightly salt, then bake in the hot oven for about 8 minutes until golden brown.

    Deglaze the pan with white wine and reduce slightly. Wash, trim and dry the cress. Distribute as garnish on plates, place the saltimbocca on top and drizzle with the sauce before serving.
