Baked Herring Fillet
Crispy carrot-wrapped herring fillets – a light dish with under 250 calories per serving, perfect for those watching their figure!
Ingredients
- 0.5 small lemon
- 250 g herring fillet (2 fillets)
- Salt
- Pepper
- 300 g large long carrots (2 large long carrots)
- 2 tbsp Rapeseed oil

Squeeze the lemon and measure 1 tbsp of juice.

Rinse the herring fillets and pat them dry. Drizzle with lemon juice, salt, and pepper.

Wash, peel, and use a paring knife to peel the carrots.

Slice the carrots lengthwise into thin strips using the paring knife.

Lay several carrot strips slightly overlapping side by side on the work surface.

Place the herring fillets on top and wrap them with the strips so that the fish is fully covered. Season with salt and pepper.

Heat the oil in a non-stick pan over high heat and sear the parcels on both sides until crisp.

Place a sheet of parchment paper on a baking tray, put the herring parcels on it, and bake in a preheated oven at 180 °C (fan 160 °C, gas: level 2‑3) on the middle rack for 10–15 minutes.
