Salmon Fillet with Fennel

Ingredients

  • 2 bulbs fennel
  • 1 clove garlic
  • 1 tbsp Olive Oil
  • Salt
  • Pepper
  • a splash dry white wine
  • 100 ml fish stock
  • 2 sprigs dill
  • 4 salmon fillets (about 160 g each, ready-to-cook with skin)
  • 2 tbsp sesame seeds

Instructions

    Wash and trim fennel, cut into wedges. Peel garlic and finely chop.

  2. 2.

    Heat oil in a pan. Briefly sauté garlic and fennel. Season with salt and pepper, deglaze with white wine and fish stock, cover and simmer for about 5 minutes.

    Meanwhile wash dill, shake dry, pluck leaves and chop. Rinse salmon fillets under cold water, pat dry, place skin side down on the vegetables. Season with salt and pepper, sprinkle sesame seeds and dill, cover and steam for about 8 minutes.

    Serve the salmon arranged over the fennel.
