Chia Seed Pancakes

Ingredients

  • 3 Tbsp chia seeds
  • 300 ml milk
  • 180 g flour
  • 50 g sugar
  • a pinch of salt
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 2 Bananas
  • 1 tsp lemon juice
  • butter (for frying)
  • 6 kumquats
  • 2 persimmons

Instructions

    Add the chia seeds to the milk and let them soak for 20 minutes. Mix flour, sugar, salt, baking powder and cinnamon together. Peel the bananas, mash with a fork and combine with the dry mix, milk and lemon juice into a smooth, thick batter; add more milk if needed depending on banana size.

    Heat butter in a pan and pour portions of batter to form small pancakes, cooking each side for about 2–3 minutes. Rinse kumquats while hot and slice them thinly. Peel the persimmons, halve and cut into slices. Serve the fruit alongside the warm pancakes.
