Fruit Pancakes

Ingredients
- 4 oranges
- 300 g fresh blueberries
- 1 apple
- 1 pear
- 2 tbsp lemon juice
- maple syrup (for serving)
- 2 tbsp butter
- 200 g Flour
- 2 tsp Baking powder
- a pinch of salt
- 150 g buttermilk (milk)
- 2 Eggs
- 2 tbsp sugar
- butter (for frying)
Instructions

Melt the butter over low heat and let it cool until lukewarm. In a bowl whisk together the flour, baking powder, and salt. Beat the butter, buttermilk or milk, eggs, and sugar with a hand mixer until frothy. Fold in the dry mixture and let the batter rest for about 15 minutes.

Set the oven to 60°C (fan). Place a large plate inside.

Heat the butter in a large non-stick pan. Drop spoonfuls of batter onto the pan. Cook over medium heat for 2-3 minutes, flip, and cook another few minutes until golden. Transfer the cooked pancakes to the plate or tray in the oven and continue with the remaining batter.

When all pancakes are done, peel the oranges with a sharp knife, slice into rounds; wash the apple, slice (remove core if desired) and drizzle with 1 tbsp lemon juice. Wash the pear, quarter, deseed, cut into wedges and drizzle with 1 tbsp lemon juice. Pat the blueberries dry.

Arrange the fruit atop the pancakes on plates and drizzle with maple syrup. Serve immediately.
