Ingredients
- 400 g stachelberries
- 100 ml dry white wine
- 50 g sugar
- 2 tbsp lemon juice
- 250 g mascarpone
- 200 ml whipping cream
Instructions

Wash the stachelberries and drain well. Bring to a boil with the white wine and 2 tbsp sugar. Remove from heat, take about 1/4 of the berries with 4-5 tbsp liquid and let cool. Puree the rest finely and strain through a sieve.

Let it cool further, then stir in the remaining sugar and lemon juice into the mascarpone and fold in the whipped cream. Divide among four glasses. Chill for at least an hour before serving and spoon the remaining berries with their liquid over the top.
