Ingredients
- 1 kg cherries (pitted)
- 500 g fruit gel sugar (for 2½ parts fruit to 1 part sugar)
- 5 g citric acid (1 packet)
- 50 ml black currant liqueur (Cassis)

Clean jars and rinse with hot water, then invert to dry. Briefly boil the lids in water.

Add cherries to a large pot, crush slightly with a potato masher, then add the gel sugar and citric acid; bring to a boil, simmer for 3 minutes while stirring, then stir in the liqueur.

Fill the jars almost to the brim with jam, seal, and invert onto the lids for about 10 minutes.

Revert jars and let cool. Store in a cool, dark place.
