Cherry Jam with Red Wine

Cherry jam made with red wine: cherries and red wine contain the secondary plant compounds polyphenols and flavonoids.
Ingredients
- 450 g sour cherries
- 450 g sweet cherries
- 500 g gelling sugar (3:1)
- 200 ml red wine
Instructions

Rinse four screw-top jars (400 ml each) with boiling water and let them dry upside down on a kitchen towel. Wash the cherries, drain, and remove stems.

Pit the cherries and cut them into small pieces.

Place the cherries in a pot, add the gelling sugar and red wine, and stir to combine.

Bring to a boil while stirring constantly, then simmer for 4 minutes with vigorous bubbling.

Pour the hot jam into the prepared jars, seal with screw caps, leave standing upside down for 5 minutes, then set upright. The jam will keep for about half a year when sealed.
