- 80 g walnut kernels
- 2 tbsp sugar
- 2 chicories
- 2 Apples
- 2 pears
- 150 g Gorgonzola cheese
- 5 tbsp apple cider vinegar
- 4 tbsp grape seed oil
- Salt
- ground pepper
Instructions

Coarsely chop the walnuts. Melt the sugar in a non‑stick pan and caramelize half of the nuts until golden brown. Spread on parchment paper and let cool.

Wash the chicory, trim the stem and separate into individual leaves. Wash the apples and pears, halve them, remove cores and slice thinly.

Arrange the chicory, apple and pear slices decoratively on a plate. Crumble the cheese and caramelized nuts, then sprinkle with the remaining walnuts. Whisk vinegar and oil, season with salt, drizzle over the salad, and serve seasoned with ground pepper.
