Noodle Salad with Bell Pepper and Cucumber

A fresh noodle salad featuring cucumber, bell pepper, chili, sesame oil, lemon juice, scallions, coriander, and soy sauce. Enjoy this vibrant dish from Spoonsparrow!

Ingredients

  • 0.5 cucumber
  • 80 g wheat noodles
  • 0.5 chili pepper
  • 2 tbsp sesame oil
  • 3 tbsp Lemon juice
  • 1 red bell pepper
  • 2 Spring Onions
  • 0.5 bunch coriander leaves
  • 2 tbsp Soy sauce

Instructions

    Halve the cucumber lengthwise, scrape out the seeds with a spoon and slice crosswise.

    Pour about 500 ml boiling water over the noodles, let sit for 5 minutes, then drain and set aside.

    Slice the chili in half, deseed, cut into thin strips, mix with sesame oil and lemon juice, add to the noodles and stir.

    Wash and core the bell pepper; cut one half into fine strips and the other into small triangles or diamonds.

    Trim and wash the spring onions, slice into thin rings.

    Combine the prepared vegetables with half of the coriander leaves, toss with soy sauce, garnish with remaining coriander, and serve on plates.
