Cheese Omelette with Bell Pepper

Ingredients

  • 2 red bell peppers
  • 8 spring onions
  • 8 eggs
  • 4 tbsp heavy cream
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • Salt
  • 120 g Emmental cheese
  • 4 tsp butter
  • paprika powder (sweet)

Instructions

    Wash, halve, clean the bell peppers and cut into strips. Wash, clean the spring onions and slice into rings. Set aside some rings for garnish, mix the rest with the pepper.

    Whisk the eggs with the cream and season with pepper, nutmeg and a little salt. Grate the cheese.

    Preheat the oven to grill mode.

    Bake each omelette using 1/4 of the ingredients. Add butter to a hot pan and sauté the pepper with spring onions. Steam for 2-3 minutes while stirring. Pour the egg mixture over and sprinkle with cheese. Let it cook briefly, then finish under the grill for about 2 minutes until set.

    Before serving, sprinkle with remaining spring onions and a pinch of paprika powder.
