Ingredients
- 3 eggs
- 2 tbsp heavy cream
- Salt
- Pepper (freshly ground)
- 1 Spring onion
- 1 red bell pepper
- 1 tbsp butter
- 2 tbsp grated cheese (e.g., cheddar)

Preheat the oven to 220°C (425°F). Beat the eggs with the cream and season with salt and pepper. Wash, trim, and slice the spring onion into thin rings. Wash, halve, trim, and dice the bell pepper.

Add butter to a hot pan and pour in the egg mixture. Sprinkle with spring onions and bell pepper, then let it set for 1–2 minutes before browning lightly. Roll up and sprinkle with cheese. Bake in the oven for about 5 minutes until golden brown.
