Champignons with Herb Filling

Ingredients
- 12 Champignons
- 1 bundle parsley
- 6 thyme sprigs
- 2 shallots
- 2 Garlic cloves
- 2 slices white bread (from the day before)
- 4 tbsp olive oil
- 3 tbsp butter
- Salt
- freshly ground pepper
- Chopped parsley for garnish
Instructions

Clean the mushrooms and twist out the stems. Dice them very finely.

Wash, pat dry, and finely chop the parsley.

Remove thyme leaves and finely chop them.

Peel and finely chop the shallots and garlic.

Grate the white bread finely.

Sauté the shallots and garlic in 1 tbsp hot butter until translucent. Add the mushroom cubes, remove from heat. In a bowl combine with grated bread, olive oil, remaining butter, and herbs. Stuff into mushrooms and bake at 180°C (356°F) for about 10 minutes until golden brown. Sprinkle with parsley before serving.
