Crab Patties

Ingredients
- 1 Shallot
- 1 Garlic clove
- 2 bell peppers (yellow and red)
- 1 mild red chili pepper
- 2 Spring Onions
- 1 tbsp Olive Oil
- 1 tbsp freshly chopped coriander
- 1 tbsp freshly chopped parsley
- 2 tbsp Worcestershire sauce
- 1 tsp sharp mustard
- 1 tbsp Lemon Juice
- 1 egg
- 2 tbsp mayonnaise
- Salt
- Pepper (freshly ground)
- 500 g crab meat
- 3 tbsp breadcrumbs
- 3 tbsp clarified butter

Peel and finely chop the shallot and garlic. Wash, trim, deseed, and remove white membranes from the bell peppers and chili, then dice them small. Wash and slice the spring onions into thin rings. Heat oil in a pan and sauté the shallot and garlic until translucent. Add the pepper and chili cubes briefly; remove from heat. Stir in spring onions, herbs, Worcestershire sauce, mustard, and lemon juice. Mix in the egg and mayonnaise, seasoning with salt and pepper.

Break up the crab meat and discard any shell remnants if present. Fold in the breadcrumbs.

Finally fold everything together. Shape about 8–10 small patties and fry them slowly in clarified butter over medium heat for about 8 minutes on each side until golden brown, turning occasionally. Drain on paper towels.

Serve with various dips or coleslaw.
