Celery Salad with Apple and Parsley

Ingredients
- 5 EL yogurt (1,5 % fat)
- 2 EL walnut oil
- 1 EL lemon juice
- 1 EL white wine vinegar
- 1 TL coarse mustard
- Salt
- white pepper
- 600 g celery root
- 2 tart apples
- 2 stalks Parsley
Instructions

For the dressing whisk yogurt with walnut oil, lemon juice, white wine vinegar and mustard, season with salt and pepper.

Peel the celery root and cut into thin sticks. Blanch the celery sticks in boiling salted water briefly, drain in a sieve, shock in ice water and let dry well.

Peel the apples, quarter them, remove seeds and grate the flesh coarsely.

Wash parsley, shake dry, pluck leaves. Finely chop parsley leaves and mix with apple shreds, celery and dressing. Taste and serve in bowls.
