Fruit Salad with Roquefort

Ingredients

  • 125 g raspberries (fresh or frozen)
  • 160 g arugula (2 bunches)
  • 2 ripe pears
  • 2 Blood oranges
  • 30 g walnut kernels (2 tbsp)
  • 150 g Roquefort cheese
  • 5 tbsp cold-pressed olive oil
  • 3 tbsp freshly squeezed lemon juice
  • Salt
  • Pepper

Instructions

    Gently wash the raspberries and pat dry; thaw frozen berries if used.

  2. 2.

    Wash the arugula, spin dry, and remove stems. Wash pears, halve, core, and slice into wedges.

    Peel blood oranges thoroughly, halve, and cut into thin slices. Roughly chop walnuts.

    Distribute all prepared ingredients onto four plates.

  5. 5.

    Crumble cheese and also scatter over the plates.

    Whisk olive oil, lemon juice, salt, and pepper to make a vinaigrette. Drizzle salad with dressing.
