Tomato Salsa

Ingredients
- 400 g Tomatoes
- 1 green bell pepper
- 4 Spring Onions
- 2 cloves garlic
- 2 chilies (red and green)
- 3 tbsp Lime juice
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 2 tsp mustard
- 1 bunch parsley

Wash the tomatoes, halve them and remove seeds. Catch the seeds and juice, strain through a sieve and set aside. Dice the tomato flesh and place on prepared kitchen paper to drain. Wash the bell pepper, trim it and dice into small cubes.

Clean the spring onions, wash and cut into thin rings. Peel the garlic, split the chilies lengthwise, remove seeds and finely dice. Mix tomatoes, bell pepper, chili, and spring onions, then squeeze in the garlic. Combine tomato and lime juice with salt and pepper, add oil and mustard, briefly puree, and fold into the salsa.

Wash parsley, shake dry, pluck leaves and roughly chop. Stir into the salsa and let it rest for about 30 minutes. Re-stir before serving, adjust seasoning if needed.
