African-Style Cabbage and Pepper Salad

A fresh salad featuring cabbage, bell peppers, onions, and a spicy harissa dressing inspired by African flavors. Try this and other recipes from Spoonsparrow!

Ingredients

  • 1 tsp cumin seeds
  • 1 small white cabbage (≈500 g)
  • 3 bell peppers (red, yellow, green)
  • 1 small red onion
  • 2 tbsp white wine vinegar
  • 0.5 lime (juice)
  • 1 tbsp brown sugar
  • Salt
  • 4 tbsp olive oil
  • 2 tsp harissa powder
  • 2 sprigs parsley

Instructions

    Toast the cumin seeds in a dry pan until fragrant, then remove and let cool. Remove outer leaves from the cabbage, cut out the core, and shred or julienne into fine strips. Wash, deseed, and slice the bell peppers into strips. Peel and finely dice the onion.

    Mix vinegar, lime juice, sugar, 1–2 tsp salt, oil, harissa, and cumin in a bowl. Combine the cabbage, peppers, and onion with the dressing and let marinate for at least 4 hours, preferably overnight.
