Ingredients

  • 2 Eggs
  • 100 g whole wheat flour
  • 100 g buckwheat whole grain flour
  • 15 g fresh yeast
  • 275 ml lukewarm milk
  • 2 tbsp liquid butter
  • 1 pinch salt
  • 4 tbsp clarified butter
  • 1 small red onion
  • 250 g sour cream
  • 3 tbsp chives
  • Salt
  • black pepper (ground)
  • 100 g trout caviar

Instructions

    Separate the eggs and mix both flours. Dissolve the yeast in the milk, then stir in the liquid butter, yolks, and salt into the flour mixture. Adjust the milk amount slightly if the batter is too thick or thin. Cover and let rise in a warm place for about 20 minutes. Chill the whites, beat them stiff, and fold them into the batter.

    Heat some clarified butter in a pan, drop spoonfuls of batter with a tablespoon each, and fry golden brown on both sides for 1-2 minutes per side. Drain on kitchen paper and keep warm at 80°C in the oven.

    Finely chop the onion and mix it with sour cream. Add the chives, season with salt and pepper. Spoon onto the blinis and top with caviar.
