Ingredients
- 200 g wheat flour
- 50 g buckwheat flour
- 7 g dry yeast
- 0.125 l milk
- 1 egg
- 1 pinch salt
- 3 tbsp clarified butter (for frying)
- 150 g smoked salmon (thin slices)
- Lemon juice
- Salt
- ground pepper
- 120 g sour cream
- dill sprigs (for garnish)
Instructions

Combine the flours and dry yeast in a bowl. Add milk, egg, and salt, then knead quickly. Cover the dough and let it rise in a warm place for about 1 hour.

Preheat the oven to 80°C with upper and lower heat to keep warm.

Heat some clarified butter in a pan. Drop spoonfuls of dough into the pan and cook small pancakes until golden brown on both sides, about 12 minutes each. Keep them warm in the oven.

Dice the salmon finely. Season with lemon juice, salt, and pepper, then place on the finished blinis. Add a dollop of sour cream and garnish with dill sprigs. Serve arranged on a platter.
