Blinis with Smoked Fish

- 150 g buckwheat flour
- 150 g wheat flour
- 1 pinch salt
- 20 g yeast (½ cube)
- 300 ml lukewarm milk
- 2 tbsp liquid butter
- 2 egg whites
- butter for frying
- 300 g sour cream
- Salt
- Pepper
- 4 smoked trout fillets
- 12 slices of Wammerl
- 4 tbsp chopped chives

Separate the eggs. Mix the flours together. Dissolve the yeast in the milk and stir it into the flour mixture with the liquid butter and salt; cover and let rise in a warm place. Whisk the egg whites until stiff, fold them into the batter before baking. Heat some butter in a pan, ladle in the batter, spread slightly, and cook each side golden brown; keep warm. Aim for at least eight pancakes. Divide the trout fillets into 2‑3 pieces each. Season the sour cream with salt and pepper. Fry the Wammerl slices in a dry pan until crisp. Place one pancake on a plate, then layer alternately with Wammerl, trout, and sour cream until all ingredients are used; sprinkle with chives. Lay another pancake diagonally on top and serve.
