- 0.25 cube fresh yeast (ca. 10 g)
- 500 ml milk
- 1 tsp Honey
- 4 eggs
- a pinch salt
- 200 g chestnut flour
- 2 tbsp clarified butter
- 250 g crème fraîche
- 200 g smoked salmon (slices)
- dill sprigs (for garnish)

Crush the yeast and dissolve it in the milk. Mix with honey, eggs, and salt, then gradually fold in the flour. Let the dough rise for 15 minutes.

Heat a little clarified butter in a non-stick pan and bake small blinis from the dough. Repeat until the dough is used up.

Whisk the crème fraîche until smooth. Arrange the blinis on plates, spread with crème fraîche, top with smoked salmon slices, and garnish with dill sprigs.
