Maple syrup glazed carrots from Spoonsparrow: super tasty and easy to prepare.

Ingredients

  • 1 kg carrots (peeled)
  • 4 tbsp Maple syrup
  • 4 tbsp coconut oil
  • 1 tbsp ginger (finely chopped)
  • 1 tbsp chili sauce (e.g., sriracha)
  • 2 cloves garlic (finely chopped)
  • Salt
  • black pepper

Instructions

    Whisk together maple syrup, coconut oil, ginger, sriracha and garlic; season with salt and pepper.

    Arrange carrots in a baking dish and drizzle evenly with glaze. Bake in a preheated oven at 225 °C (fan: 200 °C; gas: level 3–4) for about 35–40 minutes until tender, turning the carrots several times in the glaze during baking.
