Ingredients

  • 700 g sweet potatoes
  • 2 thyme sprigs
  • 1 tbsp Olive Oil
  • Pepper (freshly ground)
  • Himalayan salt (or coarse sea salt)

Instructions

    Preheat the oven to 200°C fan-forced. Wash the sweet potatoes thoroughly and slice them into very thin rounds with a mandoline. Rinse the thyme, shake dry, and pluck off the leaves.

    In a bowl combine the olive oil with salt and pepper. Toss in the potato slices until well coated. Line two baking trays with parchment paper and arrange the potato slices individually on the trays.
