Ingredients
- 600 g mixed carrots
- 0.5 orange (juice)
- 2 tbsp apple cider vinegar (30 ml)
- 1 tsp tahini
- 1 tsp agave syrup
- Salt
- 2 tbsp grape seed oil (40 g)
- a handful of daikon radish greens (red and green)

Peel the carrots and grate them lengthwise into thin strips. Whisk together orange juice, vinegar, tahini, agave syrup, salt, oil, and 2-3 tbsp water until well combined.

Toss the carrot strips with the dressing, season to taste, and serve on a plate topped with daikon radish greens.
