Carrot Salad with Orange Dressing

Spoonsparrow carrot salad with orange dressing – refined with creamy tahini and sweet agave syrup. Grab the bowls and enjoy!

Ingredients

  • 600 g mixed carrots
  • 0.5 orange (juice)
  • 2 tbsp apple cider vinegar (30 ml)
  • 1 tsp tahini
  • 1 tsp agave syrup
  • Salt
  • 2 tbsp grape seed oil (40 g)
  • a handful of daikon radish greens (red and green)

Instructions

    Peel the carrots and grate them lengthwise into thin strips. Whisk together orange juice, vinegar, tahini, agave syrup, salt, oil, and 2-3 tbsp water until well combined.

    Toss the carrot strips with the dressing, season to taste, and serve on a plate topped with daikon radish greens.
