Pomegranate Salad

A refreshing salad featuring pomegranate and goat cheese that always receives rave reviews.

Ingredients

  • 160 g goat cheese
  • 2 chicory heads
  • 1 handful of lamb's lettuce
  • 1 Pomegranate
  • 2 tbsp capers
  • 1 tbsp Raisins
  • 2 tbsp lemon juice
  • 2 tbsp Apple cider vinegar
  • 1 tsp Honey
  • 3 tsp olive oil (30 ml)
  • Salt
  • Cayenne pepper
  • 40 g toasted pine nuts

Instructions

    Wash, trim, and separate the chicory into leaves.

    Wash, trim, and dry the lamb's lettuce. Arrange both decoratively on a platter.

    Halve the pomegranate, remove the seeds, and discard the white membranes. Mix with capers, raisins, lemon juice, vinegar, and honey; let rest for about 10 minutes. Then add oil and season with salt and cayenne pepper.

    Place the goat cheese atop the salad with pomegranate and drizzle the vinaigrette over it. Sprinkle with pine nuts before serving.
