Buttermilk Vegetable Soup

Try the spicy buttermilk vegetable soup from Spoonsparrow. A light dinner. Best suited for meal prep.

Ingredients

  • 1 Garlic clove
  • 1 red chili pepper
  • 3 Carrots
  • 1 tbsp Olive Oil
  • 300 ml Vegetable broth
  • 2 tsp starch
  • 300 ml buttermilk
  • 1 stalk tarragon
  • Salt
  • black pepper (freshly ground)
  • 1 tsp lemon juice

Instructions

    Peel and finely chop the garlic. Clean, wash, deseed, and finely slice the chili pepper. Peel the carrots and cut them into thin slices.

    Sauté the chili and garlic in hot oil, add the carrots and steam for about 5 minutes, then pour in the vegetable broth and simmer for another 7 minutes. Mix the starch with cold buttermilk. Add to the soup, heat briefly. Season the soup with salt, pepper, and lemon juice. Wash the tarragon, shake dry, finely chop, and sprinkle over the soup before serving.
