Red Cabbage Salad with Walnuts

Ingredients

  • 1 head red cabbage
  • Salt
  • 200 ml unsweetened red currant juice
  • 2 tbsp raspberry vinegar
  • a pinch sugar
  • Pepper
  • Chives
  • 60 g walnut kernels
  • 80 g sultanas
  • 3 tbsp Walnut Oil

Instructions

    Halve the red cabbage, wash it, remove the core and slice into very thin strips. Divide onto 4 plates, lightly salt and let stand for 20 minutes.

    Meanwhile heat the juice in a small pot and reduce slightly. Add vinegar, a pinch of sugar and pepper. Pour the hot dressing over the cabbage, let rest another 15 minutes.

    In the meantime wash the chives, shake dry and cut into rings. Sprinkle the salad with walnuts and sultanas, drizzle with oil and serve garnished with chives.
