Burger mit Sojafrikadelle

Ingredients
- 200 g soybeans (dried)
- 1 onion
- 10 g ginger
- 1 tbsp freshly chopped coriander leaves
- 60 g breadcrumbs
- 1 egg
- Salt
- Pepper
- 1 tbsp soy oil
- 2 handfuls beetroot leaves
- 2 handfuls sprouts
- 4 Tbsp mayonnaise
- 4 burger buns (optional with sesame)

Soak the soybeans overnight in plenty of water. The next day, cook them in fresh water for about 1.5 hours until soft.

Peel and finely chop the onion and ginger. Drain the soybeans and let them dry well. Use a hand blender to mash them and mix with the onion, ginger, coriander and breadcrumbs. Fold in the egg and season with salt and pepper. If needed, add more breadcrumbs so the mixture is easy to shape. Form 4 patties (you may use a burger press if desired) and fry them in hot oil in a grill pan for 4–5 minutes on each side.

Rinse the beetroot leaves and shake dry. Do the same with the sprouts and let them drain well. Mix them with mayonnaise.

Cut the buns horizontally and toast the cut sides until golden brown as desired. On each bottom bun place lettuce leaves and the soy patties, then top with sprouts. Place the tops on and serve.
