Ingredients
- 1 handful coriander leaves
- 2 tbsp pine nuts
- 1 egg
- 500 g ground lamb
- Salt
- Pepper (freshly ground)
- 3 Tbsp plant oil
- 1 Red Onion
- 1 tsp powdered sugar
- a splash of red wine
- 4 small pita breads
- 1 handful watercress

Rinse the coriander, shake dry and chop. Knead with pine nuts and egg into the ground lamb. Season with salt and pepper and shape into 4 patties. In a hot pan, fry in 2 tbsp oil on both sides for 6-8 minutes until golden brown.

Peel the onion and slice into rings. Briefly sauté in remaining oil in a hot pan. Sprinkle powdered sugar and allow to caramelize lightly. Deglaze with wine and steam gently for 2-3 minutes until the wine has evaporated.

Halve the pita breads horizontally, fill with lamb patties, onions and watercress, and serve.
