Burger with Caramelized Onions and Cocktail Sauce

Ingredients
- 150 g mayonnaise
- 3 tbsp ketchup
- 20 ml cognac
- 1 tbsp Tomato Paste
- 1 splash Lemon juice
- 1 tsp horseradish
- 1 splash Worcestershire sauce
- Salt
- Cayenne pepper
- 3 red onions
- 2 tbsp butter
- 2 tsp powdered sugar
- 50 ml dry red wine
- 2 tbsp balsamic vinegar
- Salt

- 1 old bread roll
- 1 Shallot
- 3 tbsp olive oil
- 2 tbsp freshly chopped parsley
- 1 tbsp freshly chopped marjoram leaves
- 1 egg
- 400 g ground beef
- 1 tsp sharp mustard
- breadcrumbs
- Salt
- ground pepper
- 4 burger buns
- 4 lettuce leaves (e.g., iceberg)

Whisk mayonnaise with ketchup, cognac, tomato paste, lemon juice and horseradish until smooth; season with Worcestershire sauce, salt, and cayenne pepper. Chill until serving.

Peel onions, slice into thin rings, sauté in 1 tbsp butter until translucent, sprinkle powdered sugar, caramelize, then deglaze with red wine and vinegar. Simmer over medium heat for about 10 minutes until liquid nearly evaporated; season with salt and pepper.

Soak the old bread roll in lukewarm water. Peel and finely chop the shallot, sauté in 1 tbsp hot oil, add chopped parsley and marjoram, let cool slightly. Mix this with egg, squeezed bread crumbs, mustard, and ground beef until the mixture is firm but not too soft; season heavily with salt and pepper. Slice buns, toast each side in a grill pan, then keep warm in an 80°C fan oven.

Shape the meat into patties; grill each side for 2–3 minutes in remaining oil. Wash lettuce, pat dry, slice into thin strips.

Spread 1 tsp cocktail sauce on the underside of each bun. Layer with lettuce, patty, and caramelized onions. Place the top bun and serve with extra cocktail sauce.
