Ingredients
- 500 g sticky rice
- 200 ml sweetened coconut milk
- 2 pandan leaves
- 1 pinch salt
- 40 ml Waldmeister syrup
- 60 ml water
- 100 ml orange lemonade
- 80 ml water
- 20 ml non-alcoholic Blue Curacao
- 100 ml mango juice
- 100 ml sour cherry juice
- rice flour (as needed)
- cherries (for garnish)
Instructions
-
1.
Soak rice in cold water for 2 hours, then rinse and mix with salt. Steam on pandan leaves for about 15 minutes, remove the leaves. Add coconut milk, stir, and steam for another ~10 minutes, then briefly blend.
-
2.
Spread the thick rice porridge onto plastic wrap to a thickness of 3-5 mm in a 24 x 20 cm rectangle and let it cool.
-
3.
Cut the firm rice mass into four parts measuring 10 x 12 cm each.
-
4.
Bring cherry juice to a boil and stir in about 1 teaspoon of rice flour. Bring back to a boil; the mixture should thicken and become slightly viscous, adding more flour if necessary.
-
5.
Spread the cherry mixture onto a baking frame lined with plastic wrap (12x10 cm), place the first rice plate on top, and let it cool.
-
6.
Repeat the process with orange lemonade, then water and Blue Curacao, followed by lemon juice, and finally Waldmeister syrup and water.
-
7.
Allow each layer to cool briefly. Smooth the Waldmeister layer with a damp dough scraper. Let everything cool completely for at least 2 hours. Then cut into towers sized 8 x 3-5 cm and serve garnished with two cherries each.
