White Chocolate Pinwheel Cookies

The white chocolate cookies from Spoonsparrow impress with a mild pine nut flavor and a fruity fresh note.
Ingredients
- 400 g spelt flour type 1050
- 0.5 tsp Salt
- 0.5 tsp Baking powder
- 0.5 tsp Baking soda
- 200 g white chocolate chips
- 50 g Pine nuts
- 1 untreated orange
- 200 g butter
- 200 g raw cane sugar
- 2 tsp bourbon vanilla
- 2 Eggs
- 20 g powdered sugar (from raw cane sugar)
Instructions

Mix spelt flour with salt, baking powder, baking soda, white chocolate chips and pine nuts. Rinse the orange hot, dry it and grate its zest; add this to the flour mixture.

Cream butter with raw cane sugar and bourbon vanilla. Beat in the eggs, then fold in the flour mixture.

Scoop small portions of dough with a teaspoon, shape into balls, and place them on two parchment-lined baking sheets with space between each. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 15 minutes.

Remove from the oven and transfer to a cooling rack. While still warm, dust with powdered sugar. Let cool completely before storing airtight.
