Ingredients
- 800 g Brussels sprouts
- Salt
- 2 shallots
- 200 g bacon cubes
- 2 tbsp olive oil
- 1 tbsp juniper berries
- 250 ml heavy cream (at least 30% fat)
- black pepper (freshly ground)

Wash, trim and halve the Brussels sprouts. Blanch in plenty of salted water for 10-12 minutes until firm, then shock in cold water and drain.

Peel and finely dice the shallots. In hot oil sauté bacon cubes and shallots for 2-3 minutes until golden.

Add the blanched Brussels sprouts, crush juniper berries in a mortar, stir in cream, simmer for 1-2 minutes, season with salt and pepper, and serve.
