Bruschetta with Olives

Ingredients
- 4 ripe tomatoes
- 2 Garlic cloves
- Basil
- 50 g black olives (pitted)
- 8 slices ciabatta
- 4 tbsp olive oil
- 1 splash Lemon juice
- Sea salt
- freshly ground pepper
- basil (for garnish)

Preheat the oven to 250°C.

Peel and halve the garlic cloves. Boil the tomatoes briefly, cool, peel, quarter, deseed, and cut into wedges.

Coarsely chop the olives. Wash the basil, dry by shaking, slice finely, and mix with olives, tomatoes, and 2 tbsp oil. Season with sea salt, lemon juice, and pepper.

Toast the bread slices in the oven until golden brown, then rub the hot slices with garlic and drizzle with 2 tbsp olive oil.

Top with the tomato mixture and serve immediately.
