Spoonsparrow Bruschetta with cream cheese is a delicious twist on the Italian classic.
Ingredients
- 8 slices baguette
- 2 tbsp olive oil
- 4 small tomatoes
- 80 g crumbly cream cheese
- 1 tbsp Lemon Juice
- Salt
- white pepper
- basil (for garnish)
Instructions

Preheat the oven to 220°C (425°F) with upper and lower heat. Drizzle the bread lightly with oil and roast in the oven, turning once, for about 5 minutes until crisp.

Wash the tomatoes and slice them. Mix the cream cheese with lemon juice, salt, and white pepper, tasting as you go.

Remove the bread from the oven, let it cool briefly, then top each slice with tomato slices. Spoon 1–2 tsp of the cream cheese mixture onto each and serve immediately.

Optionally serve additional toasted bread topped with diced tomatoes or a tuna-caper cream for extra flavor.
