Roasted Bread with Carpaccio, Arugula, Avocado and Parmesan

Ingredients
- 220 g beef fillet (trimmed)
- 4 slices gray bread (or focaccia, ciabatta)
- 4 tbsp olive oil
- 1 Garlic clove
- 1 bunch arugula
- 1 Avocado
- 40 g parmesan (thinly shaved)
- 2 tbsp Walnuts (chopped)
- Salt
- Pepper (freshly ground)
- 1 tbsp walnut oil
- 1 lemon (juice)
Instructions

Wrap the meat in plastic wrap and chill for about 1 hour.

Drizzle bread with 2 tbsp olive oil and grill or sear on both sides. Peel garlic, halve it, and rub one side of each slice with it.

Remove the meat from the plastic, unwrap, and cut into very thin slices (best with a slicer).

Wash arugula, shake dry, and spread over the bread slices.

Peel avocado, halve, remove pit, and cut into strips. Place on the bread, then add carpaccio and sprinkle with parmesan and walnuts.

Combine remaining olive oil with walnut oil and lemon juice, drizzle over the breads, and serve immediately.
