Ingredients

  • 200 g thick white beans (canned)
  • 1 small red onion
  • 2 cloves garlic
  • 1 handful Arugula
  • 4 tbsp white balsamic vinegar
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 0.5 tsp lemon zest
  • 1 tbsp freshly chopped parsley
  • 4 cherry tomato strips
  • 8 slices light Italian country bread (or ciabatta)

Instructions

    Preheat the oven to grill mode.

    Rinse the beans and drain in a sieve. Peel and quarter the onion, slicing into thin strips. Peel one garlic clove and finely chop; halve the other. Wash and dry the arugula.

    Whisk vinegar with chopped garlic, lemon juice, salt, pepper, and olive oil; mix in lemon zest, onion strips, parsley, and beans.

    Wash tomatoes and place on an oiled baking sheet. Add bread slices and bake in the hot oven for 3-4 minutes until tomatoes are warm and bread is golden brown. Rub bread with halved garlic clove, top with vegetable mixture and arugula, then add one tomato strip each. Serve immediately.
