Brownies with Glaze
A classic that always turns out well: Try the brownies with glaze from Spoonsparrow!
Ingredients
- 200 g dark bittersweet couverture
- 100 g butter
- 160 g sugar
- 4 eggs
- 100 g flour
- 200 g powdered sugar
- 3 tbsp cocoa powder (dark)
- 2 tbsp water

In a heat‑proof bowl over a pot of hot, non‑boiling water, melt the broken bits of dark bittersweet couverture with 2 tbsp water. Add butter and sugar and let them dissolve. Separate the eggs. Stir the yolks and flour into the chocolate mixture until well combined. Whisk the egg whites very stiffly and fold them in gently.

Line a rectangular cake pan with parchment paper, pour in the batter, and place it in a cold oven. Turn on the oven to 180°C only after placing the pan inside, then bake the brownies for about 40–50 minutes (depending on your oven) until firm. Insert a wooden stick into the center; if no liquid batter clings when you pull it out, they’re done. Remove from the oven, let them cool slightly, carefully transfer to a wire rack, peel off the parchment, and allow to cool completely.

For the glaze, whisk all ingredients together until smooth; if too thick, stir in a little water. Spread the glaze over the cooled brownies, let it set, then cut into 20 pieces for serving.
