Breakfast in English style with fried potatoes and sunny-side-up eggs by ➸ Spoonsparrow is always well received.

Ingredients

  • 800 g cooked potatoes (from the day before)
  • 1 onion
  • 2 tbsp plant oil
  • Salt
  • pepper (ground)
  • 200 g Cherry tomatoes
  • 4 eggs
  • 1 tbsp chive rings

Instructions

    Peel and dice the potatoes. Peel and dice the onion.

    Slowly fry the potatoes in hot oil for 5-6 minutes until golden brown. Add the onions, cook another ~4 minutes, season with salt and pepper, then spread halved tomatoes over the potatoes.

    Crack the eggs on top of the vegetables, sprinkle with cheese, season with salt and pepper, and bake under a hot grill for about 5 minutes. Serve sprinkled with chives.
