Omelette with Potatoes and Sausage

Ingredients
- 800 g potatoes
- 1 Shallot
- 250 g meat sausage
- 1 bundle chives
- 2 tbsp clarified butter
- Salt
- pepper (ground)
- nutmeg
- 4 eggs
- 100 ml whipping cream
- 2 tbsp chive ribbons

Peel the potatoes and simmer in salted water for about 30 minutes, drain and cool, then dice small.

Chop the shallot, remove the skin from the sausage and dice it.

Sauté the shallot in hot clarified butter until translucent, add the sausage, stir, then add the potatoes and fry briefly. Stir in half of the chives, season with salt, pepper, and nutmeg.

Whisk together eggs and cream, pour into the pan, cover and cook over medium heat until the egg is almost set (about 2‑3 minutes). Slide onto a flat plate, flip back into the pan, and cook for another 1‑2 minutes.

Sprinkle with remaining chives and serve cut into four portions.
